The meal will begin with a roasted cauliflower soup sprinkled with toasted hazelnuts, followed by a salad course of local greens, roasted pear and topped with a pomegranate vinaigrette. The entrée course will feature a filet imperial with truffle butter served with roasted onions, a local winter root vegetable medley and truffle mashed potatoes. Sour cherry crumbles topped with vanilla bean ice cream will be served for dessert. Bistro 57’s Dark Cherry Clafoutisīistro 57 will open at 4 p.m. on New Year’s Eve and serve a three-course meal, highlighted by fresh local ingredients, for $38 per person. Lobster bisque made with white wine and topped with basil and Parmesan croutons will be followed by a main course featuring a slow-roasted lamb shoulder with minted pea purée and herb au jus accompanied by potatoes and seasonal vegetables.
